Boil Timer

Ready to start cooking?

Put the crawfish in an ice chest and fill with water. Let them soak for at least 30 mins then drain, fill up with water again.

Fill pot with water about halfway

Put in all the spices, garlic, lemons, potatoes, and bring to a boil. Boil for 15 minutes. (Timer: Fire up the pot)

Add the crawfish, add mushrooms and sausage. (Timer: Put em in!)

Boil for 3 minutes, then cut off the fire.

Add the corn, add back the potatoes, and let them soak for at least 30 minutes (it's worth it, trust me) (Timer: Let em Soak)

After they've soaked, take them out of the pot and put them in an ice chest to steam for 15 mins (Timer: Let em Steam)

Chef's Notes

  • *Quantity of crawfish is listed in sacks based on an average weight of 35 lbs
  • For the second batch, use half the amount of seasonings used in the first batch, since you are reusing the water.
  • Hunger level setting ranges from 2 lbs per person to 5 lbs per person
  • These instructions assume that you are doing one sack per pot, one at a time, reusing the water after each batch. You should not do more than 2 sacks with the same water
